Paddy Sour

Add Paddy’s, lemon juice, simple syrup, and egg white to dry shaker (without ice). Shake for 30 seconds, add ice, and shake again, strain into glass slowly for optimal egg white foam. Garnish with 3-4 bitters and orange peel.
